He plays the best available player, that means when a guy gets hurt (let's say a Corner) the 2nd string corner doesn't come in... The best player comes in. So, the best player will play defensively no matter the postion. Also, you will see packages with the best rushers on the team in te game (regardless of postion could be a LB, two DE's, and a DT) he will put our players in the best postion to win regardless. This system is two fold... First, you don't handicap yourself in terms of talent and second you don't handicap your players ability.
The offense will be run the same way with respect to the postion.

The secondary learns principles which are applied to the entire playbook as run through the entire playbook so all of the secondary people know what each postion does so the next best player will replace the player that got hurt. Same with the D-Line or the LB's... And the LB's and Safeties have similar body types so they can switch as can the LB's and DE's that are lighter or heavier.I get what you're saying.
However, If the starting CB gets hurt. The back up will come in.
Otherwise...according to your logic. The entire defense will have to change to accommodate the "next best player" getting on the field once a starter goes down
