Locally, I love Pelancho's and Cancun's, but I am addicted to Chipotle's huge burrito-wrap things.

Burrito with carnitas, cilantro rice, salsa, and those lime-salt chips as a side...OMG! We need one of those in Knoxville!epper:

Monterry's Mexican Restaurant on Mercants in Knoxville is without a doubt the best Mexican food ever.

Too many to choose from in Houston area and none in Orlando. Its a Mexican food wasteland. Some ok places but none that are great.

Las Margarita's in Chattanooga. (Northshore) They even have a "dike" band play one night a week.
