There is this hat that looks like a " Bear Bryant" hat, but its got a Tennessee T in the middle of the hat. Does anyone know where I can find one of these hats?

It looks like the Power T is just stitched onto the houndstooth ball cap. I would assume that once you have the cap, any shop that does embroidery work could handle the job.
