As many as will come, as long as they are of the desired quality. They can always redshirt someone or play the old 5-2 defense! Half these safeties now are the size of linebackers so maybe it would fly.

See also Jashon Robertson. Most tend to forget he came in as a DT. But I agree with you, load up as many DT candidates as you can. And make it clear publicly and privately you plan to use them as defensive tackles.
Then let them work it out in spring practice. Plenty of time to let them figure out the depth chart. Make sure they develop a friendship and respect for the OL coach. Soon enough, the guy that wants playing time may ask for the switch before the coach brings it up.
HS offensive linemen rarely make a defensive switch. But lots of defensive tackles transition well to the offense.
Don't forget Kongbo (unless you were specifically talking DTs).
Not taking a single high school D-lineman is a glaring weakness in our 2017 class IMO. I think that may very well come back to haunt us in a couple of years when Vickers and Johnson graduate (if Johnson ever gets reinstated, that is) in the same year that Tuttle and McKenzie become draft eligible. We may get absolutely gutted at DT after the 2017 season, and, as of right now, Quay Picou and a few walk-ons are all that would be left. That makes building depth at DT the biggest recruiting need on the defensive side by far for this cycle IMO. Signing a good juco DT with 3 years to play would be huge if there are any out there.
If they are highly talented D linemen, you take all of them you can. Usually it's not possible to load up on such ready talent and we....UT....winds up taking several "developmental" projects; which is okay that's what everybody has to do nowadays. One exception is left tackle. But that's offense and a topic for another day.
4 or better. We don't even know if JUCO Alexis Johnson will ever play a down here depending on outcome of alleged charges. McKenzie and Tuttle are early entry candidates too, so we may only have them for 2 more seasons.
Looking at the Rivals top 250 for 2017 there aren't many 5 star DT's but plenty of 4 star ones. Most of those 4 star recruits have us listed on their radar. I say we sign at least 3 maybe 4. There will be plenty to choose from it appears because not many of these 4 star DT's have committed anywhere yet.
The #1 5 star recruit for Rivals is a DT(Marvin Wilson). Boy, if we could land him that would be great! There are only two 5 star DT recruits listed from Rivals but the other one(Tyler Shelvin) has already committed to LSU: https://n.rivals.com/prospect_rankings/rivals250/2017?position=DT
