Did ours for the first time in a simple dry brine for 36 hours, slathered in herb butter, and cooked at 350 convection, and it was done ridiculously early, less than two and a half hours (the convection, I assume), and it was juicy, including the breast meat.
Other than having to give up the fridge real estate during the brine stage, it was really simple.
