3 lbs Small new potatoes
2-1/2 cups salt
Boil in large pot 30 minutes or until taters are fork tender

Drain , let's dry a few minutes, and serve with sour cream, cheese, etc

Sounds awesome.

I’m thinking one more step to smash, scatter cheese, and roast under the broiler for ~3 min

We actually put 5 or 6 in a bowl or plate, cut open with fork and cover as tho it was baked potato, or my fav...dip in sour cream and enjoy...it's an every football game finger food
