“Cajun” is derivative of “Arcadian.” Though Arcadia harkens back to Greece, in this instance, it refers to Canadian settlers who fled to French Louisiana to escape persecution during the conflict between England and France for control of Canada. Those who settled and subsisted on what they could harvest from the bayous developed a patois from which we take “Cajun.”
Creole refers to those of mixed racial heritage, specifically Caribbean black and European white. It also refers to the pidgin language of these peoples, and finally to their fusion cuisine.
