How long did U smoke?
What temp?

I've never used a smoker before but very tempted to buy a Master Built and give it a try.
I have a pellet smoker, and used mesquite pellets for this. It took about 2 hours or so to reach 195 degrees internally, smoker was set at 265. After ut reached 195 internally, I pulled it, and put into an aluminum pan. I had already rubbed it with garlic salt, pepper, and a little seasoned salt. In the pan I poured bone bone broth tallow, and added carrots and onions. I put it back on the smoker until it hit 220 internally, further away from the direct heat to give the onions and carrots time to cook.

I do mine at 225 with hickory and apple pellets. Put in the broth/onion aluminum pan when the roast reaches about 165 internally

this is a lie. I don't see the "Add A1" step in there.

Over cooked.
