Peach Cobbler

8 medium peaches, peeled and thinly sliced
2 cups sugar
1/4 cup water
2 sticks (1 cup) margarine
1 cup flour
1 egg

Combine peaches, 1 cup sugar and water in saucepan and bring to boil. Pour into 8-inch square baking dish. Mix margarine, flour, egg and rest of sugar. Spoon over hot peaches. Bake in 500 degree oven until light brown. Reduce heat to 250 degrees and cook for one hour or until thick.

Chicken and Dumplin's

1 stewing hen
1 tsp salt
3 cups flour
1/2 cup cold water
1 egg
1 heaping Tbs shortening

Cut chicken for stewing. Barely cover with water and cook until tender (2-3 hours).
Remove chicken from stock and debone. Put flour in mixing bowl. In center of flour put egg, shortening and salt. Gradually add cold water. Work plenty of flour into the dough. Roll dough out thin and cut into 2 x 3 inch strips. Drop into fast boiling broth one at a time. When all dumplings are added, lower heat and simmer 12-15 minutes. PLace chicken back into the stew. A little butter may be added if the chicken is lacking in fat.

has a place called "Mom's" and I think they have the best peach cobbler in West TN. It's like 1,000 calories per bite. Butter and crusty sugar everywhere. I've eaten so much I felt like a peach before.Good stuff.:hi:
