How does one tell the difference Behr? Is it just a coloring thing?

Basically yes. You really don't see those often, but sometimes when a grocery store advertises crab legs really cheap....they will try to pass those off. They just aren't as sweet.

I have a medium sized steamer. But, I have used a stock pot with a small colander. Presentation is not as cool, but it won't effect the cooking process or flavor if you break them at the joints to fit before cooking.

no, but sometimes it gets strained or skimmed, then it's called clarified butter
