FWIW, on the rare occasion that the Missus and I buy a rotisserie chicken, we make a meal around the leg quarters and wings, saving the breast meat for a different meal. I get the author's suggested use of shredded pre-cooked breast meat in white bean stew. For cubed chicken purists, chuck the rotisserie chicken idea, poach your breast meat, cut it into cubes, incorporate accordingly. I do like to use cannellini in white bean chicken stew.
