Here is a quote about the woo in Rocky Top (number 3 on the list):

In my opinion, truer words have never been penned. Anyone who does the "woo" without being in an arena watching the Greatest Living American, Ric Flair, should be hit repeatedly in the face with a tire iron until their face is the consistency of wet cement.

You are correct sir. The most appropriate use of woo is in fact after Flair delivers a "Wahoo McDaniel" tomahawk chop to the chest of his opponent.
