I'd pass on the "Crimson" hot sauce. :) #VFL

Very nice. I've used them before. Great flavor, but a little on the small side. Love them.

Depends. I'll get it to 197-203, and then hold it there for a couple of hours, and then let it coast down to the mid-140s. If I have time, I'll throw it back in to tighten up the bark, but I don't feel it's mandatory -- even at cookoffs.

That's how I cook them, if only to speed up the process. Also, watch the "Barbecue with Aaron Franklin" episode on brisket. He does a studyon wrapping vs. not wrapping, and what to wrap with.

Yes. Very impressed with the tenderloin. If the rest is as good, I'll definitely be ordering more.

There's a guy in Texas who is raising Iberico hogs. You can find him at acornseekers.com. I can't wait to try some of the other cuts that I picked up.

More grilled scallops. This time, they were marinated in soy, lime juice, garlic, and ginger. Served on a thai basil and pea puree.

I've never used a Green Mountain, but I've seen them in stores. Three metal seems thin, which means you'll burn more fuel. Price point is great, though. The best built pellet I've seen is the Yoder. A friend has one, and I'm VERY impressed. Pricey, but they are no compromise. Check them out.

I have a Silverbac. Much better built than the Traeger - heavier gauge steel, better wheels, heavier grates, etc. Better warranty, too. Price includes tax and delivery. I chose the Grilla despite finishing runner-up last year in the Traeger Meat Madness contest and winning a $575 Traeger gift...
