No, it's not different. Interim or not he's still under contract. There's nothing wrong or against the rules for a university to conduct a HC search and have them sign a MOU/LOI if the current coach has been notified. Again, nothing has been said other than Gruden signing a MOU/LOI. Whether you believe that to be "over the line" or not matters very little.
Read an interesting article on Bleacher Report about how Tennessee fans wont talk about anybody but Gruden, but how hiring an NFL coach with no college coaching experience might be a bad move for Tennessee. I think it makes some valid points about recruiting and overall management of kids rather than professionals.
What are your thoughts?
OHS had an interim coach. That's much different. Name me one school that had a coach signed in writing before the full time head coach was officially hired?
Some of you saying "bye" to players that support their coach or try to make a stand until their coach is gone are off base. Why in the world would it be a bad thing for a kid who signed with Dooley to support him.
Well, say goodbye to Tiny, AJ, James and others. I think that outlook by fans is petty and weak, regardless of who you want to be coach next year.
Take this for what it is worth. And sorry if this has already been posted. But Gruden was at the knoxville airport last weekend. Probably doesn't mean anything, but I thought that was curious. No need to believe me, but a close family member who had no idea we were even considering him saw him. TIFWIW
In reality we do not know what has gone on in other schools searches. I bet Auburn has been in touch with some people, as has Arkansas and other schools. We are just not as in tune with those situations as we are with ours. I think it is crazy to think they cannot come to an agreement with a future coach while the current coach is still employed up to the point of actually signing a legal document.
Let them say goodbye. You play for a team, not a coach. Whoever the new coach is will not give them a relaease. What are they going to do, sit out a year or go to the draft.

He still had to coach those games that season. Dont take away from the job he did. They may have been Dungys player, but Jon Gruden coached them to the super bowl that year.
You take whats given to you, grudens break came nfl before college, dont chastise him for that.
