Thanks. Always struggle with the flat being a bit dry when I do fat on top, but my bark isn't anywhere yours with my fat down choice. Seems like I always end up debating bark vs juicy meat with juicy winning out. Might need to rethink after seeing yours.

Can always do a foil boat on meat side to help keep it juicy as well (I probably should have done this)

Well, that would be an idea, but the wife has spent too much time on twitter seeing about all the things that are poisoning us and anything with aluminum ain't gonna fly.

Noticed Matt had a bigger second shelf on his traeger that he used for his overnight cook. Moved it further from the heat source which would take some of the stress off the flat I guess. I'll need to see if I can find one for my pellet smoker. The one that came with mine won't hold the brisket unfortunately. Enjoy that Stagg. I'm getting depressingly low and it will be a while before I can lay hands on another bottle.

Haha I get it on the aluminum. Do you season the night before or the day of? I also assume you keep the point pointed at the heat vs the flat too

Clemson and NC State are more natural fits in the SEC than SoCar and UNC imo. Here's my logic:

Most of the SEC are land-grants with some exceptions: Vandy, Ole Miss, Bama (however Bama did receive a grant of land from the Feds), Oklahoma, Texas, and South Carolina. All the other SEC schools are Morrill Act schools.

Clemson, Virginia Tech, and NC State are also Morrill Act schools.

If you look at the ACC, they're historically mostly liberal arts and private schools: FSU, Louisville, Miami, GT, Duke, UNC, BC, Pitt, UVA, Syracuse and Wake. Add SMU, Notre Dame, and Stanford to that list.

So for SEC currently: 10 LG/MA, 6 other
ACC: 14 other, 4 LG/MA

I propose a trade: Vandy and SC for Clemson and NC State or VT.

Can’t get rid of a founding member of the conference.

But the most important thing is that we would really miss beating vandy in every sport. There’s just so much joy in it.
I have two partners that went to vandy med school. They were so obnoxious when vandy got to beat Tennessee duing our Debacle Decade. I want to laugh at them until I retire. My favorite thing to say to them is “Doesn’t it feel better now that everything is back to normal?”

Fat on top. Low and slow. Indirect heat (I stick a pan of water between it and the coals). And leave it wrapped and unsliced until it’s cooled down or the juice will come right out of it.

Top 3-5 class. That would be a huge breakthrough on the recruiting front.

Getting hiter gray keys and Wyatt would put us at #6 right now, which is crazy. Add in Moa and we would be at #3 right now
