My wife felt like cooking again (THANKFUL). Supper tonight was Kale and Mustard greens cooked with a big ham hock, two full racks of ribs, and homemade corn muffins.

The ribs came from Kroger, and they had more fat on them than the ones from Sam's Club or Publix. They were delicious, though, but probably we will stick to Publix/Sam's in the future for ribs. She cooked the ribs about five hours in the oven. The dry rub was salt, pepper, and brown sugar, and with about an hour of cook time remaining she added the sauce (Sonny's).

Gud eats, and it'll be good sleeps. hahaha

BTW, If anybody's in the market for a cast iron Dutch Oven, this is the one we got a while back. It's really nice to have for soup, chili, jambalaya, and (today) greens. It's a heavy and pricey sumbeech, but my wife wanted one of good quality. She says she's gonna cook jambalaya this weekend for the game. I hope so.

Of course, the key with anything cast iron is to run it through the dishwasher on full cycle a dozen or so times as part of the curing process. Yer welcome. ha

That's a thing of beauty. It doesn't get any better than Viking in my book. The red is awesome. That's a good price.

That's what she said when she wanted to buy it. I told her with all the health issues she's had and as much as she likes to cook when she's able that we just weren't going to be concerned about pinching every penny. But yeah, I've passed that along to some folks, and they picked one up. We've really done well in the past couple of years finding some things at good prices: the new air fryer, the KitchenAid mixer and mandoline, that kick-a$$ upright magnetic knife rack, and this. Plus, about a month ago, my daughter who lives here and works at FedEx got a "gift" of a big griddle (one big enough to cook four steaks) based on how long she'd worked there. That reminds me I need to make a call about my circa 1970 electric skillet. A while back, I sent it down to the vocational school in the county where I teach so the students could try to fix it if it could be fixed hahahaha

I've got a Viking skillet I brought from the restaurant but other than that I've only had the pleasure of using Viking ovens and mixers. Lol, expensive but indestructible.

Which one of you losers are gonna try watching at least 2 episodes of Kitchen Confidential so you can tell me what you think. I've watched it probably 8 -9 times. Half way through it again now.
