I don’t think I’ve ever had beef sausage in Texas. Only pork. Are you thinking of beef ribs?I'm planning on smoking a brisket for the Old Man and father-in-law for Father's Day. I've only been to TX once but I'm told the beef sausage at BBQ places is awesome. Anybody have any recommendations on where/what to order? (I've cross-posted with Off-Topic Grill BBQ thread.)

That’s easy. Go to your popular local butcher shop and buy his house brew grind with their spices. Beef or pork I personally like pork more.
There is a local butcher shop I go to when I’m buying sausage to smoke. At any one time they have 20+ house grinds and spice blends on hand.
Here is where I buy my sausage for smoking. Check out the picture of the sausage display case. They have i think two of those filled at any given time. All different grinds and spice blends.Local butcher isn't a thing in Clarksvol City.
