I usually just use jiffy, but I do love me some homemade Ho cakes.

My wife hates cornbread but decided to make me some and made it out of Jiffy. First, bite I realized it was corn cake not cornbread but trying to be a good husband I ate it. Hope she never does that again.....

Three secrets to good cornbread...1) good old heavy cast iron skillet, well seasoned (Lodge makes the best). 2) use buttermilk instead of sweet milk in the batter and most importantly 3) use bacon drippings or some type of pig based fat instead of vegetable oil. Get that skillet sizzling hot before you pour in the batter too

It wasn’t the lack of intelligence that eventually brought him down though, it was his acute and unadulterated stubbornness. He would not listen to his assistants or peers if his life depended on it. A coach without top notch intelligence can still be very successful as long as he has the humility to listen to the wisdom of his team

My mother taught my wife how to make cornbread. And agree with everything. She always heats up her oil in the skillet before she pours it into the batter.
