Things I'm happy about today

Not sure I've seen one that sits on the counter. I've got 2 12" on the wall and knives I haven't used in years prolly. I alternate between a chef and santoku and use a paring paring, that's pretty much it anymore.

Yeah, against doctor's orders I'm trying some ahi in it tonight for the first time. I put a clear glass bowl with some of that Carli oil in the fridge Saturday night to see what happens, this morning I put a nice piece of ahi in it. Gonna see how it does at 400 for 2-3 minutes. Not expecting much, but I gotta see.

In the divorce I took the nice Chef and Paring knives and let the ex keep the Santoku. I bought an inexpensive ceramic santoku and love it.

Before Christmas, my wife felt like going up to Sam's, and we were looking at kitchen items. A lady just grabbed these, turned to us, and said these were the best knives she had ever used. She said she worked at a nursing home and was responsible for the prep work. We got a pack on the cheap, and my wife swears these are so easy to grip and do such a good job. Between this and the mandoline, I don't think she's used anything else recently.

We have it parallel to one of the cabinets going back toward the wall, and it basically uses about five inches of counter space. Only assembly was putting in screws to connect the two pieces.

Let us know how the ahi turns out. We keep saying we're going to use it for bona fide "cooking," but honestly we use ours for frozen potatoes, appetizer-type foods, chicken patties/wings, etc., most often. Like last night, my wife made up some stir fry and we heated up the egg rolls in there. But my daughter uses it pretty much everyday to heat up something for the grandkids. Ours gets a ton of use.

I like that I can just throw them in the dishwasher after using them on raw chicken and pork, because I am especially paranoid about anything that touches raw chicken and pork.

Best knives I have ever owned. They will take an edge in a heartbeat.

I unintentionally lied about the tuner. I pull it out to thaw but already had some Mahi thawed that I put in the oil. Tuna is going to be tomorrow.

Ok I am a jerk apparently this is a Jewish thing. Still I stand by the hair choice as not being the best
 
I'm happy, friend at church gave my wife a card at church today. She had written inside how she was praying this guy could help her that we're going to see. Put $100 inside, and told us to enjoy a Valentine's date on her and her husband. That's pretty sweet.
That is so sweet.....
