@hmanvolfan, my wife's "Midwestern Yankee meatloaf" has a cap of ketchup and cheddar cheese. She applies the ketchup, allows it to caramelize, then adds shredded cheddar cheese and lets this melt.
Yeah that sounds good my mom makes two loaves puts marinara between with black olives and mozzarella then tops it the same way. Delicious. Flattens it like a meat pizza

I'm very fond of grilled chicken hearts; fresh lamb or venison heart meat grilled to just medium rare... Oh yeah.
