Would be interested if someone could post a picture (not google) of a fresh Lima, wouldn’t you?

We used to buy them at roadside stands on the way to Emerald Isle, but that was when we’d gotten to central NC. I’d like to grow some, but I haven’t figured out why they’re not found around here. Spring starts too late? Doesn’t get hot enough? I’ve gone through all my gardening books, and nothing rally jumps out at me. I’ve got a dark fence facing south/ southwest which ought to get some heat.

Huh, fresh limas with butter and salt and pepper are wonderful. Emphasis on fresh. Add fresh corn for succotash. Mmm

Farmers grow crops that make money. No money in putrid, disgusting lima beans.

They grow better way down south, need heat and sun. Since central NC is sorta the same here, I’m just guessing here, might cultivate them young indoors near sunlight (like basil) and keep warm, I’ve never been a fan. Probably not the best person to ask.

I actually use a pound of lean ground beef and a pound of ground turkey in my chili. Once it simmers for an hour or so in all the spices you can't tell it's not beef, IMO.

I’m too old to admit, I like a little fat cooked in the chili, yea I know, ought to be more healthy.

That stuff in the spoon looks like rutabaga to me. Yuck.

Anyone else use non-ground beef? As in beef that isn’t ground? I’ve sliced up breakfast steak or something like that in the past. Cooked low and slow, it’s tender.

You can use cubed beef, depends on the amount of fat you want in the beef. Chuck would be a good option, cooked slow.

McCormick spice packet extra beans (prefer black beans) use rotel with green Chile's for tomatoes, and instead of ground beef use shaved beef, like carne asada.

IMO good but not as good as the cheapo McCormick's packs. Make a double.
