You keep the chicken in the refrigerator, preferably over night, soaking in Franks Hot Sauce*( I assume other hot sauce will work) and then shake off the chicken and while it's still cold, drop it into the 325-350 degree grease.* The soul seasoning added after the chicken is removed from the fryer is a combination of salt, garlic powder, black and red pepper, Cajun seasoning, onion salt, paprika--mix equal quantities of each, stir well, and then pour into restaurant size spice containers.* If you try it this way, you'll become addicted so beware. This is not my original recipe; I copied it from Gus', a long time famous rural West Tennessee cafe.
