I was told we were considered the away team because technically we are only allowed 7 home games by the NCAA and if we considered this a home game we would have to give up a game in Neyland.

I'm not aware of any NCAA rule limiting the number of home games...but if there is one, it's seems it is not 7.

Tennessee played 8 home games as recently as 4 years ago, the 2011 season: Montana, Cincinnati, Buffalo, Georgia, LSU, USCe, MTSU, and Vandy.

Kentucky has 8 home games this year.

I've noticed ESPN seems to be using both primary and secondary logos a lot in their college graphics, score bugs, etc.

Is it just a smaller Power T, the Vols word mark, or does it not exist?
