Olive oil on a steak just sounds nasty.

The problem is, many restaurants have a different definition of what medium-rare and medium are. I ordered medium-rare once and it came out barely cooked. At another place I ordered medium, and it came out well-done. I'm always afraid to send it back because of the horror stories you hear about pissed of cooks.

Actually, go to kroger and get the sealed flat iron. Not flank or skirt. Flat iron. It's marbling is perfect and there is no waste. Marinade in a big ziploc baggie with Cavenders or lawrys and Whatsthishere sauce. Grill to your liking. Cut it into slivers and serve.
You can cut it with a fork

That's always a cook problem. Sometimes a cook can't put two steaks in a row out the same way.
good call on not sending it back. I got threw college working restaurants and could tell you some stories.

When I waited tables, generally the only people who ordered well done were lower class folks
